15 Quick & Healthy Breakfast Solutions



If you read our blog, then you know that I've been on a quest to get over my favorite habit of serving sugary cereal for breakfast every day.  Don't judge :)... Yes, I confess, I've done it for years, and my kids have begun a small uprising for pancakes and other such true breakfast food.  They may be the only children in the world who don't like Tricks or Lucky Charms (well, the youngest still likes the colored marshmallows).

Anyhow, I just never ever desire to begin the day with hours in the kitchen, and extra sinks fulls of dishes. Plus, yummy breakfasts are often fattening (eh hem, not that sugary cereal is healthy). So, I've been working on this list of breakfast solutions.

The requirements of the recipes and ideas here are that they must be 1) quick 2) healthy and 3) taste good enough for my kids to eat...

Make this once and it lasts for months!

Make this batter, and it lasts for 30 days in the refrigerator. Mmmm... fresh muffins...

If you like eating cake for breakfast...

Always a winner! Get the fruit and veggies in early...

So, so, so simple and yummy...




Parfait
Simply layer granola, yogurt, and fruit 
I use Sam's club frozen blueberries for both green smoothies and parfaits


a few other great choices...

7. Peanut butter and strawberry wrap

8. Scrambled eggs seasoned with salt, pepper, garlic powder, and onion powder in a tortilla

9. Oatmeal with flavored almonds and a touch of brown sugar

10. Oatmeal topped with peanut butter, bananas, a few chocolate chips, and a touch of honey

11. Steel cut oats with fruit

12. Scrambled eggs and feta in a pita

13. Poached egg and Canadian bacon on a whole wheat English muffin

14. Breakfast crostini: A baguette with ricotta cheese, honey, and strawberries

15. Breakfast margarita pizza: fresh mozzarella, basil, and tomato (optional egg) on toast or English Muffin
