Quick and Healthy Veggie Calzones
Our family has a tradition of pizza night every Friday night. Here is on healthy alternative that I LOVE! This Veggie Calzone is yummy, and the diet isn't blown out the door when you eat it.
Ingredients:
(I am not including amounts because I never make this recipe the same way. I just use whatever amount I feel like at the time)
Pizza dough - refrigerated, store bought, OR my favorite option is Papa Murphy's sells premade pizza dough that is already rolled out for $2-- any size.
Cut veggies- tomatoes, green pepper, spinach, mushrooms, red onion, olives
ricotta cheese
mozzarella cheese
salt and pepper
Italian seasoning
1 egg white
favorite marinara or pizza sauce
Directions:
Heat over to 375.
Roll out dough to pizza shape (if not using a previously rolled out dough).
Spread desired amount of ricotta cheese on half of the dough. Add desired amount of veggies on ricotta cheese (again, covering half of the pizza dough). Sprinkle with desired amount of salt, pepper, and Italian seasoning.
Put the half of the dough which has no topping over the half that has all the toppings. Seal dough with a fork or your fingers. Brush the egg white over the top of dough.
Cook for 20-25 minutes. Check at 20.
When cool, serve with your favorite marinara or pizza sauce to dip.
