Mile High Biscuits

One of my husbands favorite breakfast food is Biscuits and Gravy. 

Here is a really simple and easy biscuit recipe that my mother-in-law makes.  These also remind me of a KFC Biscuits.  They are really good to use to make a breakfast sandwiches too.

Navajo Tacos

 
We love Navajo Tacos!!! 
Here is a great and simple recipe we like for Indian Fry Bread from Food Network.

I love that everyone can create their own exactly the way they want. 
Some of our families favorite toppings are.....

Seasoned Meat
Cheese
Lettuce
Tomatoes
Olives
Guacamole
Sour Cream
Refried Beans
Green Onions
Salsa
 
And of course you can spread one with Honey Butter for a perfect Dessert!

Crepes

 
Recipe
 
1 1/2 cups flour
1/3 cup sugar
3 eggs
3 cups milk
1/4 cup oil
1 tsp vanilla
Mix ingredients together.
 
Cooking Light Magazine has a great article about how to cook a crepe and cooking tips for crepes.  It can be kind of confusing and frustrating at first but reading their instructions helped me and practicing will help.  It's kind of like when you first learn to make pancakes and learning how to pour or flip.

The #1 EASIEST Menu Planning System +150 Simple Dinner Ideas

This is hands down, the most useful thing I do in my home!!!

For the first few years of my marriage and motherhood, dinner time was pretty much my nemesis! I could never think of what to make, and those rare times that I did, I either didn't have the ingredients, or I'd waited until 5 0'clock and didn't have time to get it done. Seriously, I am appalled that we survived those years. One day I realized that I was a complete mess at making meals, and totally boring. So, through a whole lot of work, I've changed... thank goodness!

 There is so much RESEARCH about how important family dinner is.  Two books that made a HUGE difference in the meal planning arena for me...





The ladies who wrote these books inspired me to create a fun and practical dinner planning system that has transformed our family dinner time.

 Each day has a theme, and THAT has made dinner planning so easy. Also, meal times are a million times more fun. 

The principle of the themes can transform dinner for any family.

 Each week as I plan our meals, I choose a meal from category for each day.

Mondays: Comfort Food 
Tuesdays: Taco Tuesday (aka Mexican food)
Wacky Wednesday: Quick Meals or Pasta 
Healthy Thursday: Fish, Chinese, Soup, or Salad
Friday night: Pizza Night 
Saturday: Breakfast for Dinner 
Sunday: Slow Cooker or Fun Food
 (I usually omit one day each week, and serve left-overs instead).

*Not everything fits under only one category (you'll see that many meals fit several categories). Also, rules can be broken. If you feel like Mexican food every night, then do it. This just makes the planning easier.

Instead of dinner time being drudgery, I really look forward to cooking and serving my family. Now, it feels like such a creative outlet, and I feel so much happiness when people like what I cook.

Breakfast from Heaven


I call this "Breakfast from Heaven" because these recipes are from the cookbooks of our loved ones who live in heaven.  My husband's Grandpa was famous for his "HOTCAKES" and my mom would make us homemade maple syrup when we had pancakes.

Speedy-Quick Taquito Enchiladas

We have Mexican food every Tuesday night at our house (we call it Taco Tuesday). I especially love making it when it's quick and easy! I love this one. It's adapted from a recipe in Paula Deen's Lunchbox Set.

Ingredients:
Package of 20 frozen chicken taquitos
1 14 oz can enchilada sauce (whatever kind you like)
1 1/2 - 2 C Mexican blended grated cheese
olives
tomatoes
sour cream
salsa


Directions:
Heat oven to 425 degrees

Spray a 9X13 pan with cooking spray and put the taquitos in 2 rows
cover with enchilada sauce and cheese.
(This part can be done earlier in the day, and covered until ready to cook)

Bake for 20 - 25 minutes.

Add toppings, and enjoy! Serve with salad, rice and corn.

{Kid Friendly} Mandarin Orange and Chicken Salad


This Mandarin Orange and Chicken Salad definitely wins in my family for a quick, easy, and everyone eats it meal. At first I didn't think my kids would even try it, because it's a salad. However,  I decided to lay it out like Hawaiian Haystacks and let them choose their own toppings. They went crazy over the mandarin oranges, chow mein noodles, and chicken. So what if they didn't eat the green stuff! I'll keep offering, and some day they'll take it, hopefully. At least they happily ate a little from each food group! I totally enjoy this meal!


Ingredients: Amount depends on how many people and how much you have
Romain lettuce
sliced almonds
feta cheese
chow mein noodles
Mandarin oranges from a can, drained and rinsed
cooked chicken cut into pieces
Light Asian dressing-- such as Newman's or Briannnas

Lay out all of the ingredients and let everyone go to town! Serve with rolls and fortune cookies, of course!

Quick and Healthy Veggie Calzones


Our family has a tradition of pizza night every Friday night. Here is on healthy alternative that I LOVE! This Veggie Calzone is yummy, and the diet isn't blown out the door when you eat it.

Ingredients:
(I am not including amounts because I never make this recipe the same way. I just use whatever amount I feel like at the time)
Pizza dough - refrigerated, store bought, OR my favorite option is Papa Murphy's sells premade pizza     dough  that is already rolled out for $2-- any size.
Cut veggies- tomatoes, green pepper, spinach, mushrooms, red onion, olives
ricotta cheese
mozzarella cheese
salt and pepper
Italian seasoning
1 egg white
favorite marinara or pizza sauce

Directions:
Heat over to 375.
Roll out dough to pizza shape (if not using a previously rolled out dough).
Spread desired amount of ricotta cheese on half of the dough. Add desired amount of veggies on ricotta cheese (again, covering half of the pizza dough).  Sprinkle with desired amount of salt, pepper, and Italian seasoning.
Put the half of the dough which has no topping over the half that has all the toppings. Seal dough with a fork or your fingers. Brush the egg white over the top of dough.
Cook for 20-25 minutes. Check at 20.
When cool, serve with your favorite marinara or pizza sauce to dip.

Simple Six Layer Dinner




This is one of those dinners that is so quick and simple to put together. Honestly, I know it doesn't look the prettiest ever, but it tastes good! It's also healthy, unless you put the fattiest kind of hamburger in it!

Ingredients:
2 C. Sliced raw potatoes
2 C. chopped celery
2 C. ground beef , raw
1/2 to 1 C. sliced raw onions
1 C. minced green pepper
16 oz. can cooked tomatoes
2 tsp. salt
4 tsp. pepper

Spray a 9 X 13 pan with cooking spray.  Place ingredients in pan in the order listed. Season each layer as you go so that the given amount of salt and pepper is used.  Garnish with green pepper slices and back at 250 degrees for 2 hours.  Makes 6 servings.

Chicken Tacos with Fresh Mango Salsa


I've recently been trying to cook all the quick and healthy recipes I have. This one is at the top of the list!! We have "Taco Tuesday" at our house (once a week, of course) and this is my current favorite under that category.  I love Mexican food, and especially when I can eat as much of it as I want (well, almost :))!

Ingredients:
3-4 chicken breasts
1 Tb. olive oil
1/2 tsp. kosher salt
1/2 tsp. pepper
3/4 tsp. cumin
Mango Salsa (easy recipe found HERE)
corn tortilla shells
cotija cheese-- stronger cheese, so you need less as a topping.

Directions:
Make Mango Salsa and set aside.

Heat olive oil over med-high heat in skillet.  Add chicken. Let sit 3-5 minutes on each side. Cut with spatula to break up the breasts into smaller pieces. Add spices. Cook till no longer pink.

Cut chicken into desired size pieces. Add to Mango Salsa.

Warm up corn tortillas on stove.  Put the chicken and salsa mixture into tortillas. Add cotija cheese. (Add any more desired toppings, but I like it just like this).

 Serve with rice, beans, and limes.

Thai Chicken Sundaes



This is my favorite meal at this particular time in my life. Yes, FAVORITE! It's quick, it's healthy, and it's seriously delicious. Even my two year old can't get enough... and THAT'S sayin' it's good!! A friend gave the recipe to me several years back, and it's a keeper!

We set it up like Hawaiian Haystacks so that each person can individualize toppings. The noodles and chicken can be served hot or cold {tastes awesome either way}. This is also fun to bring to parties or get togethers -already with topping mixed in , of course. People always ask for the recipe. So, give it a try!

Ingredients:
1 pkg. angel hair pasta, cooked
Chicken, cooked and chopped

DRESSING:
3/4 C. Rice Vinegar (seasoned or unseasoned)
3 T. Sugar
2 T. Oriental sesame oil
1/2 C. Soy sauce
2 Tb Minced ginger (which is best) or 1/2 tsp. ginger spice
2 Cloves minced garlic
1/2 to 2 tsp. crushed red pepper flakes (more makes spicier)

TOPPINGS: Whatever you like, such as...
thin sliced celery, cucumbers, green onion, cilantro, bean sprouts, chow mein noodles, peanuts, cabbage, peppers, tomatoes, lime....      


Directions:  
1.Mix all dressing ingredients together. Let sit in the fridge while preparing the rest. (Stays good for 2 weeks, if you really want to start early :)).
2. Cook chicken and pasta.
3. Cut veggies, and put other toppings in bowls OR use your VEGGIE TRAY as Jan showed in THIS great post.
4. Either mix the dressing and chicken into the noodles, or set it all out separately so everyone can choose how strong of flavor they want.

Quick and Healthy Italian Soup




 I am happy that some of you readers requested quick and healthy recipes because that's EXACTLY what I need in my own home!! I've pulled out all of my best guiltless dinners and desserts that come together fast, and I'll be posting them all!
This is one of my absolute favorites because it's so quick and light...

Ingredients:
1/4 lb. fresh mushrooms (optional- buy the mushrooms sliced)
1 tsp. butter
3 C. chicken broth
2 C. cooked chicken (optional- use canned chicken)
1 (16 oz.) can tomato sauce
1/2 cup thinly sliced carrots (optional- buy the matchstick carrots)
1/2 C. minute rice
1 small zucchini or yellow squash sliced thin
1 pkg. Italian Dressing Mix

Directions:
Saute mushrooms in butter. Add broth, tomatoes, and tomato sauce. Bring to a boil. Add all other ingredients. Simmer 10 minutes. DONE!

Serve with sliced french bread, and even the kids will love dipping bread in the soup and eating it!

Chicken Parmigiana


If you are looking for a great, healthy Italian dish look no further! Nothing beats the combo of fresh tomatoes and basil.

This recipe I adapted from a BHG magazine and have included a few tips on making it even lighter.

Ingredients:
- 1 small onion chopped            
- 1 clove of garlic, minced
- 1 Tbsp. of butter (or, I like to use coconut oil too)
- 2 cups of diced tomatoes (or 1 14.5 oz can of diced tomatoes) undrained
- 1 tsp. of sugar
- 1 tsp. of Kosher salt (I prefer to cook with Kosher salt, but regular salt will work too)
- 1/2 cup snipped fresh basil
- 1-2 pounds of skinless, boneless chicken breast (roughly 4 breasts)
- 1/3 cup bread crumbs
- 3 Tbsp. of grated Parmesan cheese
-1/2 tsp. dried oregano
- 1 egg beaten
- 2 Tbsp. milk
- 3 Tbsp. olive oil for cooking
-Shredded Mozzarella and Parmesan cheese for garnishing

1. In a saucepan, saute the onion and garlic in butter over medium heat until the onion is tender (about 4-6 minutes. Carefully stir in tomatoes, sugar, salt and a dash of pepper. Bring to boil, reduce heat and then simmer for about 10 minutes, stirring occasionally. Stir in basil (you want to do this last the basil will loose it's sweetness if it gets overly cooked). Keep Warm. Taste the sauce to see if it is to your liking.

2. Meanwhile, with a meat mallet, pound the chicken so that is is about 1/4 inch thick.

3. In a dish, combine the bread crumbs with 3 Tbsp. of Parmesan cheese, and oregano. In a separate bowl, stir together egg and milk. Dip the chicken in the egg mixture, then in the crumb mixture.

4. In a large skillet, cook the chicken in the hot oil over medium heat until golden brown and no longer pink (about 5 to 6 minutes), turning once.

Or

If you are looking to cut calories, I have grilled the chicken instead of dipping it in bread crumbs and cooking in it in the oil. Honestly, it is the sauce that is truly divine. So, if you want to omit the chicken all together I understand. 

5. Place chicken on serving plate and spoon sauce on top. Sprinkle with Mozzarella and Parmesan cheese and let it stand until the cheese is melted.

Serve with some whole grain pasta and your favorite greens and you have a healthy meal that will leave you satisfied!

Chicken and Chips

This is a great recipe when you are having a Mexican Food Craving.  
This recipe is adapted from the Taste of Home 2000 Quick Cooking Cookbook. 
 
1 can of cream of chicken soup
1 cup sour cream
2 T salsa
1/4 cup chopped green chilies
3 cups cubed cooked chicken
1 1/2 cup of colby jack cheese shredded
      4 cups broken tortilla chips
 
 
In a bowl, combined soup, sour cream, salsa, chilies and chicken.  In 9x13 pan layer the pan twice with sauce, cheese and tortilla chips.  Bake on 350 for 25-30 minutes.   You can also add olives, fresh tomatoes or guacamole for an extra kick.

Chicken Stuffing Casserole

 
We like simple at our house.  This recipe is great for leftover chicken or turkey.   You simply add 2 cups diced chicken or turkey, 1 (10.5 oz) cream of chicken soup, a box of Stove Top Stuffing made according to direction on box.  Mix together. Put in a 9x13 pan and Bake 350 for 30 minutes.

Pepperoni Lasagna Roll-Ups

 
This recipe is from the Taste of Home 2009 Annual Cookbook.  I have changed the recipe for my family.  Here is my recipe.  Cook 9 Lasagna noodles til they are soft.  In a bowl add 1 can of your favorite spaghetti sauce and 3/4 cup of ricotta cheese.  Lay your noodle out on a cookie sheet and layer it with the sauce then add 3-4 slices of mozzerella cheese.  On top of cheese layer 5 slices of pepperoni.  Roll up and put in 9 x 13 pan.  I add the leftover sauce on top and sprinkle on dry italian seasoning.  Bake 350 for 30 minutes.  You could also add a spinach layer, olives or mushrooms.

 
The Taste of Home calls for Swiss Cheese instead of mozzerella and 1/2 tsp minced chives, 1/2 teaspoon of dried oregano, 1/2 tsp dried basil instead of the italian seasoning.  Pin It

Shepherd's Pie


This is the ultimate comfort food for me.  We call it Shepherd's Pie.  Another great recipe from my mom's cookbook.  A childhood favorite.   Cook 1lb ground turkey or hamburger.  Add 2 (12.5 oz) cans of green beans and 2 (10.5 oz) of tomato soup.  After letting the tomato soup simmer with the hamburger and beans pour into a 9 x 13 pan.  Make enough mash potatoes to fill the top of a 9 x 13 pan.   Pour mash potatoes over the sauce and spread out evenly.  Sprinkle cheese on top and bake 350 for 30 minutes.  Pin It

Chicken Enchilidas

 
Chicken Enchilidas are a great 30 minute meal.  Add together in a bowl 3 cups of shredded cooked chicken.  I like to cook the chicken in the crockpot with ground cumin and chili powder for 6 hours.  You can shred the chicken with a fork.   Add 1 can(10.5oz) of cream of chicken soup, 1 cup sour cream, and 2 cups of shredded cheese.  Mix together.  Spoon mixture onto a flour tortilla and roll up.  Sprinkle some cheese on top.  Bake 350 for 30 minutes.  We like to add  2 cups cooked brown rice to mixture for a different twist as well.  You can also add a can of green chiles.
