Navajo Tacos

 
We love Navajo Tacos!!! 
Here is a great and simple recipe we like for Indian Fry Bread from Food Network.

I love that everyone can create their own exactly the way they want. 
Some of our families favorite toppings are.....

Seasoned Meat
Cheese
Lettuce
Tomatoes
Olives
Guacamole
Sour Cream
Refried Beans
Green Onions
Salsa
 
And of course you can spread one with Honey Butter for a perfect Dessert!

Our Family's "GO TO" Meal

I think every family has that "GO TO" Meal when mom looks in the cupboard and says.........
"What's am I going to fix for dinner?"
 
 
So what is your "GO TO" Meal....
Is it Pancakes, Cold Cereal, Pizza?????
 
In our house we seems to have this mixture.  It is 1 lb of cooked ground turkey, 1 can corn, 1 can kidney beans and 1 can black beans.
 
 
 
The best part is there are several different dinners we can make with this depending on what else is in the cupboard or fridge.  We use soft tortillas and make "Burritos". We add hard taco shells and make "Tacos".  We add a can of stewed tomatoes and make "Taco Soup".  We add chips and salad and make "Taco Salad".  We add chips, cheese and salsa and make "Super Nachos".  So from this one recipe we have 5 different meals that we can "GO TO" when I open the cupboard and say ..................
"WHAT'S FOR DINNER?"

Sweet Lime Chicken Enchiladas



I am not sure where I found the original recipe for this dish, but with a few adjustments it has become one of my favorite Mexican dishes. Serve with Black Bean & Corn Salsa and you have yourself an easy meal that hits the spot!

Enchiladas:
1 lb. of boneless chicken breast, cooked and shredded
1/2 Cup Honey
Juice of 2 limes (1/4 c.)
2 tsp. of Sriracha Chile Sauce
2 large cloves of garlic, minced

In a bowl, whisk the above ingredients together and combine with the chicken. Let marinade for at least 1/2 hour or while you prepare the tortillas.

Corn tortillas
1 14 oz. can of green enchilada sauce
1 cup heavy cream
2 TBSP chopped fresh cilantro
2 cups cheddar or Mexican blend cheese

Heat a griddle and add a little oil. Heat the tortillas for about 20 seconds on each side so that they are warm and flexible.

In another bowl, combine the cream with the enchilada sauce. Pour half of the sauce into a 9x13 baking dish and reserve the rest for later.

Add a large spoonful of the chicken mixture with a spoonful of cheese into the center of each tortilla. Roll each tortilla up and line the baking dish. Add the remaining cream mixture to the top and sprinkle the top with extra cheese and cilantro.

Bake at 350 degrees for 25 minutes.

Black Bean & Corn Salsa:
2 large tomatoes
1 can corn, drained
1 can black beans, drained and rinsed
Juice of 2 limes
Approx. 1/4 cup chopped cilantro
1 package Good Season's Italian dressing

Mix all ingredients together and refrigerate.

Simple Six Layer Dinner




This is one of those dinners that is so quick and simple to put together. Honestly, I know it doesn't look the prettiest ever, but it tastes good! It's also healthy, unless you put the fattiest kind of hamburger in it!

Ingredients:
2 C. Sliced raw potatoes
2 C. chopped celery
2 C. ground beef , raw
1/2 to 1 C. sliced raw onions
1 C. minced green pepper
16 oz. can cooked tomatoes
2 tsp. salt
4 tsp. pepper

Spray a 9 X 13 pan with cooking spray.  Place ingredients in pan in the order listed. Season each layer as you go so that the given amount of salt and pepper is used.  Garnish with green pepper slices and back at 250 degrees for 2 hours.  Makes 6 servings.

A Twist to your Tin Foil Dinner


Turkey Tin Foil Dinner


Don't worry you don't have to wait for Thanksgiving Dinner to enjoy this fabulous Turkey Dinner.  A few months ago, my husband suggested that we try to eat more turkey burger and less hamburger.  So I found these great turkey burgers from Jennie-O. (make sure you use the green package those are the only ones I guarantee) This is a great dinner whether you are out camping or just need a quick meal for dinner.  And because it is Turkey it makes you feel like you are getting a little taste of Thanksgiving dinner.


Start out by steaming some veggies.  It makes the veggies softer then just cooking them raw in the oven.  On a piece of tin foil I put a little bit of cream of chicken soup and then place my turkey burger on top.  It gives the meal a little gravy taste and also helps the turkey burger from burning.  Add whatever spices you like.  Cut up onions and potatoes and surround turkey burger.  Cover turkey burger with steamed veggies.  Fold tin foil making sure all ingredients are covered.  Bake on a cookie sheet at 400 for 60 minutes or until potatoes are soft.

Corn Chowder... inspired by Mimi's Cafe


Exactly eight years ago, my husband and I were moving into or first house. I was nearly 9 months pregnant and miserable. Moving made me especially exhausted, obviously. Certain delays pushed our "move in"date nearly a month after we'd planned. I remember being just bone tired, and thinking I could not lift another finger. Our first baby was coming any day, and I knew I needed to muster up the energy to get at least her room unpacked.

One evening as we were unpacking, our friends came over with corn chowder in pumpkin shaped soup bowls. It was divinely delicious. They also helped us unpack. My soul was delighted by the cuteness of the soup bowls, and warmed by the soup inside. Their timely help is one of the sweetest memories I have.

Ever since then, corn chowder in pumpkin bowls is one of my very favorite meals for this time of year. A friend gave me this recipe from Mimi's Cafe, and it is so good! If your local grocery store doesn't sell soup bowls, make some with this recipe from The Idea Door. Or just serve it in regular bowls (it's almost as good as it is in pumpkin shaped bread bowls:).



Seriously, make some. It's easy and yummy.

Salsa Ranch Chicken Wraps

This is one of the quickest & yummiest recipes I have.


These wraps can be eaten hot or cold, and take about 20 minutes to make. Kind of a "happy meal" for moms (um... not the McDonald's kind :)). Making these take a lot less time than driving to and from McDonald's.

Ingredients:
Jar of Salsa
Bottle of Ranch Dressing
Tomato Basil Tortillas
Boneless skinless chicken breasts grilled and cut into strips (or get the pkg that's already grilled & cut)
Slices of cucumber
slices of tomato
Grated cheddar and mozzarella cheese
Butter

To make them hot:
Spread about 1 Tb. salsa and  1 Tb. ranch over the tortilla. Place the chicken, cucumber, and tomato on one half of the tortilla.  Sprinkle cheese on top. Fold tortilla in half.

In a skillet melt 1 Tb of butter. Place tortilla in and cook over medium heat for 3-4 minutes on each side or until browned and cheese is melted.

To make them cold: Just put all ingredients on the tortilla and roll them up. So simple.

 Serve with some fresh fruit and enjoy!!

Brazilian Stroganoff



This is a delicious variation of the traditional stroganoff here in the United States. I came to love this while living in Brazil. The best part about it is that it can be added to your 30 minute meal recipes and it is so yummy! This is definitely a must try!

Ingredients
2 - 3 chicken breasts
1 can  Nestle table cream (found in the hispanic foods section)
1 can coconut milk
1 small can tomato sauce
1 lime
2 - 4 cloves of garlic, crushed
half of a medium size onion, chopped
1 - 2 Tbsp olive oil
mushrooms (optional)
1 can corn (optional)
shoe string potatoes or hand crushed original flavor ruffle lays (optional)
salt and pepper to taste

Instructions

In large frying pan add the garlic, onions, mushrooms and olive oil. Sautee over medium high heat (about 3 - 4 minutes) watching so it doesn't burn. Add the Nestle table cream, coconut milk, tomato sauce and corn. Squeeze the juice of the lime into the sauce as well. In the mean time, toss the chicken onto the grill with the seasoning of your choice. We usually season it with garlic salt. When chicken is done, cut it into cubes and add to the stroganoff. As an alternate to grilling you can add the chicken to the first ingredients and fry it up before adding the rest or you can boil the chicken before hand, shred it and add it to the sauce. My favorites are grilled or shredded. Let simmer for a few minutes so the flavors have time to blend together. Serve over rice and add the shoe string potatoes or crushed potato chips to the top. Enjoy!!
