Mile High Biscuits

One of my husbands favorite breakfast food is Biscuits and Gravy. 

Here is a really simple and easy biscuit recipe that my mother-in-law makes.  These also remind me of a KFC Biscuits.  They are really good to use to make a breakfast sandwiches too.

Pudding Cake



This is my sisters favorite cake.  It is really yummy!!! It is just a 9x13 white cake, a layer of your favorite pudding and a layer of cool whip.  It feels so light and refreshing compared to a layer of frosting. Pin It

Hot Milk Cake


This is my sister-in-law's recipe and it is so good.  It is really simple and hard to screw up.  You can serve it with Vanilla Ice Cream or a glass of milk.

Breakfast from Heaven


I call this "Breakfast from Heaven" because these recipes are from the cookbooks of our loved ones who live in heaven.  My husband's Grandpa was famous for his "HOTCAKES" and my mom would make us homemade maple syrup when we had pancakes.

Primary Punch

 

 
This punch has been in my mom's recipe book since I was a little girl.  I am not sure why it is named "Primary Punch," but my sisters say that my mom made it for lots of different parties, church activities and family function.   It has a little extra sweetness compared to plain orange juice.  It can also be frozen and made into a slush which is also super yummy!!!

No Bake Cookie Muffins

The other day at our house, we were making No Bake Cookies.  It is such an easy cookie recipe but I don't always like eating them as a cookie.  I feel like I need a spoon or something.  Anyway, I got to the point of putting them on the wax paper and thought I should put them in my little muffin tin pan.  I sprayed the pan and scooped them into the muffin tins and put them in the freezer to set up.  It was a fantastic idea that I thought I would share with you.  These cookies-muffins are so good cold and set up beautifully as a cookie muffin.


Our No Bake Cookie Muffins Recipe

Mix in saucepan
2 cups sugar
1/3 cup cocoa
2/3 of a stick of margarine
1/2 cup milk

Boil together 3 minutes only.  Remove from heat and add 3 cups oatmeal, 2 tsp. vanilla and 1/2 cup peanut butter.  Mix together and drop into sprayed mini muffin tin. Put into freezer until set up.  Keep chilled for a cold treat. Pin It

Our Family's "GO TO" Meal

I think every family has that "GO TO" Meal when mom looks in the cupboard and says.........
"What's am I going to fix for dinner?"
 
 
So what is your "GO TO" Meal....
Is it Pancakes, Cold Cereal, Pizza?????
 
In our house we seems to have this mixture.  It is 1 lb of cooked ground turkey, 1 can corn, 1 can kidney beans and 1 can black beans.
 
 
 
The best part is there are several different dinners we can make with this depending on what else is in the cupboard or fridge.  We use soft tortillas and make "Burritos". We add hard taco shells and make "Tacos".  We add a can of stewed tomatoes and make "Taco Soup".  We add chips and salad and make "Taco Salad".  We add chips, cheese and salsa and make "Super Nachos".  So from this one recipe we have 5 different meals that we can "GO TO" when I open the cupboard and say ..................
"WHAT'S FOR DINNER?"

Grilled Chicken Caesar Salad

My friend just introduced me to this yummy and super easy Caesar Salad.  The best part is that you can keep it simple with the basic ingredients or add ingredients to spice up the salad. 

You will need:





a bag of Romaine Salad
Bacon Bits
shredded Parmesan Cheese
Croutons
and Cardini's Light Caesar Salad Dressing

This is a great Caesar Dressing and even though it is light you can't tell the difference. 
Mix ingredients together and add dressing to taste. 

This summer we have been adding grilled chicken pieces to it to make a perfect meal.  You could also add tomatoes or cucumbers or whatever other veggies sound good to you.  This is perfect for making a large salad for a Potluck or a family Reunion.

Sweet Lime Chicken Enchiladas



I am not sure where I found the original recipe for this dish, but with a few adjustments it has become one of my favorite Mexican dishes. Serve with Black Bean & Corn Salsa and you have yourself an easy meal that hits the spot!

Enchiladas:
1 lb. of boneless chicken breast, cooked and shredded
1/2 Cup Honey
Juice of 2 limes (1/4 c.)
2 tsp. of Sriracha Chile Sauce
2 large cloves of garlic, minced

In a bowl, whisk the above ingredients together and combine with the chicken. Let marinade for at least 1/2 hour or while you prepare the tortillas.

Corn tortillas
1 14 oz. can of green enchilada sauce
1 cup heavy cream
2 TBSP chopped fresh cilantro
2 cups cheddar or Mexican blend cheese

Heat a griddle and add a little oil. Heat the tortillas for about 20 seconds on each side so that they are warm and flexible.

In another bowl, combine the cream with the enchilada sauce. Pour half of the sauce into a 9x13 baking dish and reserve the rest for later.

Add a large spoonful of the chicken mixture with a spoonful of cheese into the center of each tortilla. Roll each tortilla up and line the baking dish. Add the remaining cream mixture to the top and sprinkle the top with extra cheese and cilantro.

Bake at 350 degrees for 25 minutes.

Black Bean & Corn Salsa:
2 large tomatoes
1 can corn, drained
1 can black beans, drained and rinsed
Juice of 2 limes
Approx. 1/4 cup chopped cilantro
1 package Good Season's Italian dressing

Mix all ingredients together and refrigerate.

Paradise Punch Pie

This is the such a great summer dessert.  It is light and refreshing and super easy.

You'll need:

1 graham cracker crust
1 can Hawaiian Own "Paradise Punch" concentrate (or your favorite juice concentrate)
1 gallon of vanilla ice cream

Mix one can of  juice concentrate (without the added water) with the gallon of vanilla ice cream.  I mixed it with my kitchen aid but you could use a wooden spoon or hand mixer.  You will have a little extra ice cream to enjoy, but fill the rest into graham cracker crust and freeze. Once ice cream is solid (2-3 hours) cut into pieces, you can add fruit to the top for an extra touch.  I have also made it with pink lemonade juice and is super yummy and tangy!!

A Perfect Party Punch

Do you need a the perfect punch for your Party, Bridal Shower, Baby Shower, potluck or sitting on the porch on a warm summer night? This drink is for you.....oh and did I mention not only is it perfect, it is super easy!!!  This recipe came from my friend Noelle. THANKS!!




1 can lemonade concentrate (without the water)
1 lemonade Kool-Aid packet (without the water)
1 cup sugar
1 2L Bottle of Shasta Raspberry Crème
and LOTS of Ice.

You can add raspberries, blue berries or strawberries for décor!

Summer BBQ Pizza

Do you need something else to cook on the grill besides Hamburger and Hot Dogs for your summer party?  Try these simple Summer BBQ Pizza.  It's perfect for individualizing and only takes a few minutes to melt the cheese.

If you don't want to make your own dough, these work so great.
 
 We use are relish tray for tons of things besides just veggies, try putting your pizza topping in relish tray for easy pizza creating.  Check out this post to see more things we do with our relish tray. 

 
We learned it is best to put a piece of tin foil under your pita so it doesn't burn the bottom. Also make sure your grill is on low heat.  It really only takes a couple of minutes so keep your eyes on them. ( I would also suggest going a little lighter on the toppings to make sure the cheese melts and the bottom doesn't turns black.:)

Easy Teriyaki Beef Stir Fry


This is one of my favorite meals.  It is so easy to make too!!

1 package of Stew Meat or chicken pieces
1 bottle of Teriyaki Sauce (I really like this Kikkoman Baste and Glaze)
Cut up Veggies
1 cup Cashews
Cooked Brown Rice

Marinate your meat overnight or at least a few hours before cooking. I like to put it in a ziploc bag and then shake the sauce all over the meat. Coat electric frying pan with olive oil.  Cook meat til mostly done.  Add veggies. (I like brocolli, cauliflower, carrots, celery)  Cook until you can put a fork through veggies.  Add cashews and cook a few more minutes. (I like my cashews crunchy but the hubby likes them tender if you like them tender add cashews when you add veggies).  Serve over cooked brown rice and dinner is done!!!  YUMMY!
