6 Suggestions for Cooking with KIDS

I used to hate when my kids wanted to help in the kitchen.  I hated the extra mess and the spills.  I tried to continue teaching them to cook but it just wasn't fun for me.  I had two experiences that really changed my attitude about cooking with the kids.

1. One day I yelled so much at my daughter while cooking, because she was making so many messes and I was late trying to take dinner to someone else, that she stopped wanting to help me cook.  For several months, I would ask her to help me and she would just say "NO, I don't want to help."  It took me a while to figure out what I had done and asking her to forgive me, before she was even willing to help with the simplest things in the kitchen.

2.  With my 4th pregnancy, I got really sick at the beginning of my pregnancy.  My husband was a full time student and was often gone.  My two oldest daughters ended up cooking a lot of meals for our family with me instructing them from the couch on what to do.  I was so grateful that they had been learning the basic of how to cook so that they didn't have to just eat cold cereal and PB and J's.

I do not profess to be an expert on cooking with kids but here are  a few simple suggestions
I recommend in COOKING WITH KIDS!!

Always remember that your kids are going to make a mess when cooking.  If you think about it most likely so do you!!  When cracking eggs kids are most likely going to leave a shell in.  So to prevent frustrations, have them crack the eggs in a smaller bowl and then show them out to get the shells out with a spoon.  Kids are going to spill
flour on the floor so wait to mop the floor til you are done cooking.  They are going to most likely spill the last of the chocolate chips so remember to have extra ingredients when the kids help. And most important............
DON'T CRY OVER SPILLED MILK!!

Remember to keep the recipe simple.  Teach them to make scrambled eggs, toast, stir the noodles, peel potatoes or flip pancakes.  I also taught my girls how to use a knife to level off the flour or sugar so there is not excess.  Teaching simple steps make it easier for them to learn. Even if you have a hard time with kids in your kitchen, try taking baby steps and before you know it you can kick your feet up and watch them make you dinner.

Start Young!!  My almost three year old loves to pour things in the bowl. She loves to stir.  She loves to roll the cookies in a ball.  She loves to use her rolling pin and she can roll a pretty good crescent roll.  She loves to start the kitchen aid mixer.   She can crack an egg too but we just EXPECT A MESS at this age and leave that for mom to do.

It is so important to Make it FUN while cooking.  My daughter was completely shocked one day when I threw flour on her face, when I had started to get frustrated with cooking with her.  It was a fun moment for all who joined into our flour fight. Use your cookie cutters, food coloring or other fun recipes when cooking with kids.  Listen to fun music while cooking.  Keep the mood light and don't stress so much about the end result.  It's just food!!!

My husband is really great at (teaching by example) always telling me "Thanks for this delicious dinner."  Very rarely does a meal go by that one of my kids miss telling me the same phrase. The world is filled with so much negative, the best thing we can do is Praise them for what they are doing right.  "Good Job on not getting any shells from the eggs in the bowl."  "You flipped that pancake so good." "It looks great."  Teach with love.  Try showing them easier ways to do something.  Let go of your expectations or the way that it "SHOULD" be.  You just might come up with a new recipe or a better way of doing something.

I think the worse part of cooking is cleaning up. But try to teach your kids that clean up is just part of the recipe you are making.  Try to clean up as you go.  When baking cookies race against the timer to see if you can get the mess cleaned up before the cookies are done.  Start cooking with a sink full of soapy water so that you can wash the dishes as soon as you are done.

Happy Cooking!

Cooking Bacon in the Oven

Do you hate cooking bacon on the stove with all the greasy mess?  This is a great trick I learned. Cook Bacon in the Oven. Put bacon on a cookie sheet and bake at 350 for fifteen minutes. Turn over once.  If you like your bacon crispy it may take twenty.  Just check after ten is my advice.  My sister also taught me a great trick so that the bacon doesn't have to sit in the grease: put your cookie rack on your cookie sheet and place bacon on cookie rack.  The grease drains in to the cookie sheet so your bacon doesn't have to sit in the grease.

Crinkle Cookies

My daughter came home from Activity Days with a plate of different kinds of cookies they had made.  She made us close our eyes, taste and guess what kind of cookie it was. It was a fun game for the rest of us.  A few days later, my daughter asked if she could make these Crinkle Cookies from the recipes she had gotten from Activity Days.  They have become our families new favorite cookie.  They are super soft and gives you that chocolate fix you are needing.  The recipe is a little different but so good...

CRINKLE COOKIES
Preheat Oven to 350.

In a medium mixing bowl, mix together....
1/2 cup flour + 1/3 cup flour
3/4 tsp baking powder
1/4 cup unsweetened cocoa powder
1/8 tsp salt

In Kitchen Aid or Mixer cream together until light and fluffy
1/4 cup butter (1/2 stick) we have used margarine and it works fine
1/2 cup sugar + 2 T sugar

Mix in to butter and sugar
1 egg
1/4 tsp vanilla

Add dry ingredients and mix until well blended.

In a small bowl add 2 T powdered sugar
Roll dough into balls and roll in powdered sugar
Place on a lightly greased cookie sheet and Bake for 10-12 minutes.

Our Family's "GO TO" Meal

I think every family has that "GO TO" Meal when mom looks in the cupboard and says.........
"What's am I going to fix for dinner?"

So what is your "GO TO" Meal....
Is it Pancakes, Cold Cereal, Pizza?????

In our house we seems to have this mixture.  It is 1 lb of cooked ground turkey, 1 can corn, 1 can kidney beans and 1 can black beans.

The best part is there are several different dinners we can make with this depending on what else is in the cupboard or fridge.  We use soft tortillas and make "Burritos". We add hard taco shells and make "Tacos".  We add a can of stewed tomatoes and make "Taco Soup".  We add chips and salad and make "Taco Salad".  We add chips, cheese and salsa and make "Super Nachos".  So from this one recipe we have 5 different meals that we can "GO TO" when I open the cupboard and say ..................
"WHAT'S FOR DINNER?"

What's your family's "GO TO" Meal???

Enjoy Dinner!

Sweet Lime Chicken Enchiladas

I am not sure where I found the original recipe for this dish, but with a few adjustments it has become one of my favorite Mexican dishes. Serve with Black Bean & Corn Salsa and you have yourself an easy meal that hits the spot!

Enchiladas:
1 lb. of boneless chicken breast, cooked and shredded
1/2 Cup Honey
Juice of 2 limes (1/4 c.)
2 tsp. of Sriracha Chile Sauce
2 large cloves of garlic, minced

In a bowl, whisk the above ingredients together and combine with the chicken. Let marinade for at least 1/2 hour or while you prepare the tortillas.

Corn tortillas
1 14 oz. can of green enchilada sauce
1 cup heavy cream
2 TBSP chopped fresh cilantro
2 cups cheddar or Mexican blend cheese

Heat a griddle and add a little oil. Heat the tortillas for about 20 seconds on each side so that they are warm and flexible.

In another bowl, combine the cream with the enchilada sauce. Pour half of the sauce into a 9x13 baking dish and reserve the rest for later.

Add a large spoonful of the chicken mixture with a spoonful of cheese into the center of each tortilla. Roll each tortilla up and line the baking dish. Add the remaining cream mixture to the top and sprinkle the top with extra cheese and cilantro.

Bake at 350 degrees for 25 minutes.

Black Bean & Corn Salsa:
2 large tomatoes
1 can corn, drained
1 can black beans, drained and rinsed
Juice of 2 limes
Approx. 1/4 cup chopped cilantro
1 package Good Season's Italian dressing

Mix all ingredients together and refrigerate.

Enjoy,
Lauralee

My Favorite Mint Chocolate Chip Cookies

This recipe is my "go to" recipe for when my sweet tooth gets the best of me! Is there a better combo than mint and chocolate (well maybe tall, dark and handsome)? Anyhow, the secret to this recipe is using quality ingredients. If you are going to indulge than do it the right way!

1 cup butter, softened (don't try to use Crisco or margarine, we are going for the real deal)
1/2 cup white sugar
1 cup brown sugar
2 eggs
3 cups flour
2 tsp. vanilla (Again, use the real stuff not imitation. It really does make a difference.)
1 tsp. baking soda
1 tsp. salt
1/2 cup quality chocolate chips (I like Guitard real milk chocolate chips)
1/2 cup crushed Andes mints (you can actually buy them crushed up)

Cream butter and sugar, add eggs and vanilla, mix well, then add dry ingredients. Mix just until combined (over mixing makes the cookies flat). Fold in chocolate and mints. Bake on ungreased cookie sheet from 8-10 minutes at 375 degrees.

Enjoy,
Lauralee

Mediterranean Guacamole

Here is a little twist to your usual guacamole. I snatched this recipe from my sister, and it has now become one of my favorite, healthful and easy to make snacks!

Ingredients:
- 2 large avocados
- 2 tomatoes
- 1/2 c.  chopped yellow onion
- 1 TBS. of fresh Parsley (or I have used dry too, just use half as much)
- 1 TBS. of fresh Oregano (dried will work also)
- 1 TBS. of fresh Cilantro
- 1 tsp. olive oil
- 2 TBS. of Red Wine Vinegar
- 1 tsp. salt
- 1 clove garlic
- 4 oz. (a tub) of crumbled Feta Cheese

1. Cut the and pit the avocados and put into a bowl. With a potato masher or fork, mash the avocado to  your desired texture (I like mine a little chunky).
2. Fold in the remaining ingredients.
3. Refrigerate for an hour and serve with your favorite chips.

Enjoy!

Chicken Parmigiana

If you are looking for a great, healthy Italian dish look no further! Nothing beats the combo of fresh tomatoes and basil.

This recipe I adapted from a BHG magazine and have included a few tips on making it even lighter.

Ingredients:
- 1 small onion chopped
- 1 clove of garlic, minced
- 1 Tbsp. of butter (or, I like to use coconut oil too)
- 2 cups of diced tomatoes (or 1 14.5 oz can of diced tomatoes) undrained
- 1 tsp. of sugar
- 1 tsp. of Kosher salt (I prefer to cook with Kosher salt, but regular salt will work too)
- 1/2 cup snipped fresh basil
- 1-2 pounds of skinless, boneless chicken breast (roughly 4 breasts)
- 1/3 cup bread crumbs
- 3 Tbsp. of grated Parmesan cheese
-1/2 tsp. dried oregano
- 1 egg beaten
- 2 Tbsp. milk
- 3 Tbsp. olive oil for cooking
-Shredded Mozzarella and Parmesan cheese for garnishing

1. In a saucepan, saute the onion and garlic in butter over medium heat until the onion is tender (about 4-6 minutes. Carefully stir in tomatoes, sugar, salt and a dash of pepper. Bring to boil, reduce heat and then simmer for about 10 minutes, stirring occasionally. Stir in basil (you want to do this last the basil will loose it's sweetness if it gets overly cooked). Keep Warm. Taste the sauce to see if it is to your liking.

2. Meanwhile, with a meat mallet, pound the chicken so that is is about 1/4 inch thick.

3. In a dish, combine the bread crumbs with 3 Tbsp. of Parmesan cheese, and oregano. In a separate bowl, stir together egg and milk. Dip the chicken in the egg mixture, then in the crumb mixture.

4. In a large skillet, cook the chicken in the hot oil over medium heat until golden brown and no longer pink (about 5 to 6 minutes), turning once.

Or

If you are looking to cut calories, I have grilled the chicken instead of dipping it in bread crumbs and cooking in it in the oil. Honestly, it is the sauce that is truly divine. So, if you want to omit the chicken all together I understand.

5. Place chicken on serving plate and spoon sauce on top. Sprinkle with Mozzarella and Parmesan cheese and let it stand until the cheese is melted.

Serve with some whole grain pasta and your favorite greens and you have a healthy meal that will leave you satisfied!

Enjoy,
Lauralee

What's for dinner?

This is one of my favorite go to meals. I mean what's not to love? It's got cream cheese, steak, bread and vegetables! Pretty much the food guide pyramid in a sandwich. Minus the lentils of course. This meal is quick and easy; definitely my kind of cooking.

You don't need the expensive cuts either, I just used some rib steak. There isn't a ton of meat on there because of the rib bones but you don't need a lot. Unless you're cooking for a football team, then you should probably throw up your hands and make pancakes instead.

Slice up your meat and season as desired. I went the Brazilian route and just sprinkled on some Kosher salt. This makes the meat tender and delicious. Pop your strips in a hot pan on medium-high.
While your meat is cooking chop up the vegetables. For our family of three, I use 1 pepper, 1/2 an onion and a handful of mushrooms, but you can put as many as you like. Chop them into thin strips.

When your meat is half-way to doneness, (if you like rare then that's going to be sooner than later) add your vegetables. Cook them together until the veggies are crisp tender and the meat is cooked to your liking.

Slice your straight-from-the-oven homemade rolls (ha ha who are we kidding?) and slather each side with a generous amount of cream cheese. Don't be skimpy. Remember there's vegetables in there too so you did the healthy part already.

Insert your meat and veggie combo into your roll and enjoy!

A Twist to your Tin Foil Dinner

Turkey Tin Foil Dinner

Don't worry you don't have to wait for Thanksgiving Dinner to enjoy this fabulous Turkey Dinner.  A few months ago, my husband suggested that we try to eat more turkey burger and less hamburger.  So I found these great turkey burgers from Jennie-O. (make sure you use the green package those are the only ones I guarantee) This is a great dinner whether you are out camping or just need a quick meal for dinner.  And because it is Turkey it makes you feel like you are getting a little taste of Thanksgiving dinner.

Start out by steaming some veggies.  It makes the veggies softer then just cooking them raw in the oven.  On a piece of tin foil I put a little bit of cream of chicken soup and then place my turkey burger on top.  It gives the meal a little gravy taste and also helps the turkey burger from burning.  Add whatever spices you like.  Cut up onions and potatoes and surround turkey burger.  Cover turkey burger with steamed veggies.  Fold tin foil making sure all ingredients are covered.  Bake on a cookie sheet at 400 for 60 minutes or until potatoes are soft.

Caramel Popcorn Balls

Caramel Popcorn Balls

I have fond memories of Halloween.  When I was little, I remember helping my mom in the kitchen tie bows with curling ribbon and yarn around popcorn balls to hand out to the trick or treater's.  Back in those days only the "RICH" people bought candy, everyone else gave out homemade goods.  (Or at least that was what I thought.)  At this time my mom was a stay-at-home mom and she loved to be creative. Although some would call it a little bit "CRAZY" I loved it.  She was known for her philosophy of if you are going to do something: Do it Right, Do it Big and ALWAYS at the LAST MINUTE!!!   It never failed that we were tying bows right up til the moment that we got to leave to go trick or treating.  There are so many times as a mom now I watch myself trying to repeat those same memories for my kids.  We have continued to make Caramel Popcorn Balls for my kids to give out to their cousins and other family members.  So if you need a little homemade

TREAT this will do the TRICK!

Butternut Squash Soup without all the Cinnamon!

Need a butternut squash soup recipe that doesn't have so much cinnamon and nutmeg that you think you're eating a pureed cinnamon roll? Then you've got to try this recipe. It's got just the right balance of nutmeg, pepper and vegetables so you don't feel like you ordered dessert first.

First chop up 3 cups of butternut squash, slice 2 cups of carrots and 3/4 cup of thinly sliced onion.

Add these vegetables to 1 T. of butter in a saucepan. On medium heat, let these cook for 8 minutes covered, stirring occasionally. Add 2 14 oz. cans of chicken broth and bring it to boiling. Reduce the heat and simmer covered for 25 to 35 minutes or until the vegetables are tender.

Place half of the vegetable mixture in your blender or food processor and blend until almost smooth. Repeat with the other half.

When it's all blended return the mixture to the sauce pan. Add 1/2 t. pepper and 1/4 t. nutmeg and bring just to boiling. Add 1/4 c. of half-and-half or light cream. Heat through, if desired garnish each serving with a favorite herb or roasted pumpkin seeds. I paired this with some hot, cheesy tuna melts and it was a fantastic end to a chilly day. Enjoy!

Pork Apple Cider Soup

It's that time of year when you can find all sorts of beautiful fruit and veggies. The weather is getting cooler, and the leaves are starting to change color!  It's the perfect time to get out your favorite soup recipes. This is one of mine (I've adapted it from one that I discovered in a BHG magazine):

Ingredients:
- 2 lbs. boneless pork                                                            - 4 cups apple cider or apple juice
- 4 medium granny smith apples                                             - 1/4 tsp. salt
- 1 TBS. cooking oil                                                              - 1 tsp. cinnamon
- Large onion                                                                        - 1 cup chopped carrots
- 2 tsp. curry powder                                                            - 1 butternut squash seeded and cubed
- 1 14oz. can chicken broth
- 2 bouillon cubes

Directions:

1. Cut pork into cubes
2. Peel, core and chop 2 apples and set aside
3. In a 4qt. pan brown the pork in oil, add chopped apples, diced onion and
    curry powder

4. Add broth, cider/juice, bouillon cubes and salt and pepper to large pot
5. Bring to boil, reduce heat and let simmer
6. Add chopped carrots and return to boil
7. Reduce heat and stir occasionally (you want the carrots to be soft at this point)
8. Peel, core and chop the remaining apples
9. Add the remaining apples, squash, and  the other contents from the pan to the       pot and cook until tender
10. Add cinnamon. I like to add more curry at this point too.
11. Garnish with orange zest and sour cream.

Not only does this soup taste savory and sweet, but it makes your home smell the same way!

Enjoy!
