Quick and Healthy Italian Soup
I am happy that some of you readers requested quick and healthy recipes because that's EXACTLY what I need in my own home!! I've pulled out all of my best guiltless dinners and desserts that come together fast, and I'll be posting them all!
This is one of my absolute favorites because it's so quick and light...
Ingredients:
1/4 lb. fresh mushrooms (optional- buy the mushrooms sliced)
1 tsp. butter
3 C. chicken broth
2 C. cooked chicken (optional- use canned chicken)
1 (16 oz.) can tomato sauce
1/2 cup thinly sliced carrots (optional- buy the matchstick carrots)
1/2 C. minute rice
1 small zucchini or yellow squash sliced thin
1 pkg. Italian Dressing Mix
Directions:
Saute mushrooms in butter. Add broth, tomatoes, and tomato sauce. Bring to a boil. Add all other ingredients. Simmer 10 minutes. DONE!
Serve with sliced french bread, and even the kids will love dipping bread in the soup and eating it!
