{Cake Mix} Key Lime Pie Cookies
I had one of those days with a serious craving for dessert, but not many ingredients at home. I scoured the cupboards to make something really yummy and quick. This is the result of that search, and I tell you, they're definitely worth a try. I'll be making them many times again!
Cookies:
1 Box Pillsbury Key Lime Cake Mix
2/3 cup Shortening
2 Eggs
Icing:
6 Tbs. Butter, Softened
1/2 Cup Confectioners Sugar
3/4 Cup Sweetened Condesned Milk
1/8 tsp. Lemon extract
Zest of limes (optional)
Preheat oven to 350.
Mix the Key Lime Cake Mix, shortening, and eggs until well blended. Roll into balls and put on a cookie sheet.
Bake for 6 minutes.
Icing:
Mix butter on high for 1 minute. Add sugar, and continue to beat until very smooth. Add sweetened condensed milk and lemon extract. Beat until incorporated.
Spread icing on cookies, and top with a bit of lime zest.
Makes 24 cookies.
