Chicken Enchilidas are a great 30 minute meal. Add together in a bowl 3 cups of shredded cooked chicken. I like to cook the chicken in the crockpot with ground cumin and chili powder for 6 hours. You can shred the chicken with a fork. Add 1 can(10.5oz) of cream of chicken soup, 1 cup sour cream, and 2 cups of shredded cheese. Mix together. Spoon mixture onto a flour tortilla and roll up. Sprinkle some cheese on top. Bake 350 for 30 minutes. We like to add 2 cups cooked brown rice to mixture for a different twist as well. You can also add a can of green chiles..
